Glamorgan sausages(Selsig morgannwg)
Ingredients:
Fresh breadcrumbs                         200g (100g for coating)
Leek, very finely chopped                          1½
Caerphilly cheese, grated                          100g
Parsley, chopped                                         1 tablespoon
Salt & pepper
Dry mustard                                                  pinch
Eggs                                                               4
Milk for binding (optional)
Flour for coating
Method
·        
Mix
together the breadcrumbs, leek, cheese, parsley, seasoning and mustard.

Beat
together 2 eggs and 2 yolk and use this to bind the mixture, adding a little
milk if the mixture is too dry to hold together. Divide into 16 portions, form
into sausage shapes and roll in flour.

Beat
the remaining egg white until frothy, brush this over the sausages then coat
them in the extra breadcrumbs. Chill for 20 minutes.

Fry
gently in oil until crisp and golden brown on all sides. Serve immediately,  with a fresh leaf salad and Chutney of your
choice
